I was able to boot to AD Restore mode and ran through the uninstall successfully. The only problem I had is that the uninstaller was not able to clean up the database which I don't think started since it was using AD authentication and this was my only domain controller. After waiting about 5 minutes for it to stop trying to connect to the database, it finally gave up and completed the rest of the uninstall.
